How ‘Real’ Coffee Boosts Team Morale and Productivity (There Is Real Science Behind It, We Promise!)

In most workplaces, coffee is more than just a drink. It’s a daily ritual, a moment of pause and often the backdrop for conversations that spark ideas and build connections.

Yet despite how central coffee is to working life, we find it is frequently treated as an afterthought. Many offices settle for coffee that simply exists - rather than ‘real’ coffee that genuinely adds value to the working day.

At Moon Roast, we believe that ‘real’ coffee leads to better workdays. And there’s real science, as well as everyday experience, behind that belief.

Coffee Is a Cornerstone of Workplace Culture

Coffee is one of the few experiences shared by almost everyone in a business - regardless of role, department or seniority.

It fuels informal catch-ups between colleagues, creative conversations away from desks and short breaks that help people reset, refocus and stay productive.

When coffee is poor (and by poor we mean low grade or instant), it becomes something people tolerate. When it's good, it becomes something people enjoy and look

We've experience this firsthand.

What Do We Mean by ‘Real’ Coffee?

When we talk about better or ‘real’ coffee, we’re not just talking about how it’s served. We’re talking about the quality of the coffee itself.

Coffee is graded in a similar way to wine and broadly falls into two categories: commodity and specialty.

Commodity Coffee

This is the coffee most commonly used in:

  • Instant coffee
  • Mass-produced office blends
  • Low-cost bulk supply

Commodity coffee focuses on volume and consistency rather than flavour quality. Beans may include defects, uneven ripeness or lower-grade harvests. When brewed, this often results in coffee that tastes flat, bitter or burnt; the kind people drink out of habit rather than enjoyment.

Specialty Coffee

Coffee is classed as specialty grade when it scores 80 points or higher out of 100 in a formal tasting process known as cupping.

This scoring is carried out by trained professionals known as Q Graders. These are industry-recognised coffee experts qualified to assess aroma, flavour, balance, sweetness and overall quality.

Specialty coffee typically means:

  • Higher-quality beans
  • Better growing and harvesting practices
  • More distinctive, balanced flavours
  • Greater care taken throughout sourcing and roasting

In short, it’s coffee selected for how good it tastes. Not just how cheaply it can be supplied.

So, when we describe office coffee as ‘poor’, we’re often referring to instant or low-grade coffee, brewed to a low standard. It does the job functionally but rarely delivers an enjoyable experience.

The science behind 'Real' Coffee

Not all coffee is created equally. The way coffee is grown, roasted and prepared has a direct impact on both flavour and its beneficial properties.

Fresh Coffee Retains More Natural Compounds

Freshly roasted coffee contains naturally occurring compounds such as antioxidants and aromatic oils. These compounds begin to degrade as soon as coffee is roasted and are significantly reduced during the industrial processing used to produce instant coffee.

Studies published in food science journals have shown that brewed coffee made from freshly ground beans retains higher antioxidant activity than instant coffee, which undergoes multiple high-heat processing stages and long storage periods.

In simple terms, fresh coffee keeps more of what makes coffee coffee.

Coffee Supports Focus and Mental Performance

You probably already know that caffeine is widely recognised for improving alertness, but coffee’s benefits extend beyond just helping people feel awake.

Research shows that moderate coffee consumption can improve attention and concentration, enhance reaction time and reduce perceived mental fatigue.

Importantly, these benefits come not just from caffeine alone, but from coffee’s combination of caffeine and other naturally occurring compounds.

Better Coffee Encourages Better Breaks

Short breaks are proven to help restore attention and improve productivity when your team return to work. ‘Real’ coffee plays an important role here.

When coffee tastes good:

  • People have been shown to be more likely to step away from their desks
  • Their breaks become intentional rather than rushed
  • Importantly, social interaction increases naturally

This combination of movement, mental rest and light social contact creates a more effective reset than simply grabbing a quick instant coffee at your desk.

Aroma, Mood and the Working Day

We may be biased, but there is nothing quite like the aroma of freshly brewed coffee. It releases aromatic compounds that stimulate areas of the brain linked to emotion and memory. These aromas are largely absent in instant coffee, which loses many of its volatile compounds during processing.

The result? ‘Real’ coffee doesn’t just taste better; it often feels better too, contributing to a more positive mood and a more enjoyable workplace atmosphere.
