Producers in these areas pick and process their coffee themselves and usually dry the coffee on a lined patio. The processing involves resting the cherries after harvesting for 24 hours before removing all the floaters, depulping, and fermenting for 24-36 hours, followed by 10-14 days of drying. Producers bring their parchment to our warehouse in Jaén. \u003c\/div\u003e\n\u003cdiv\u003e\u003cbr\u003e\u003c\/div\u003e\n\u003cdiv\u003eThe parchment bags are sampled for physical analysis and then for sensory analysis. On the same day, the producer receives a price based on the results of the two analyses, and the bank transfer is made instantly. Afterwards, the parchment bags are repacked with an extra plastic bag to maintain quality all the way prior to milling and exporting.\u003c\/div\u003e\n\u003cdiv\u003e\u003cbr\u003e\u003c\/div\u003e\n\u003cdiv\u003eOur founder Fran recently journeyed to Peru, with his eldest son Tom, to meet our producers in San Ignacio. This district is one of the most well-known areas for quality coffee in Peru.  Many producers still have the old, pure Arabica varieties with some ancient Bourbon plants scattered among them. Working together as a community they are able to combine their harvests to create a large enough volume to be sold to buyers.
